This boutique hotel with only 12 keys opened this past summer—it’s the brainchild of three Australian-Greek women who oversaw the project while stuck in lockdown Down Under. The result is a minimalist wonderland overlooking the ethereal lunar beaches of Milos, in Greece’s Cyclades. Eight of the rooms have private plunge pools and all have spacious lanais, resulting in a hotel so comfortable that it’s nearly impossible to summon the energy to drag yourself away from it. But we encourage you to occasionally leave White Pebble and explore the nearby town of Pollonia, a village with only eight restaurants, that’s one of the best small towns for foodies in all of Europe.
